Spicy Rabbit Head

Ingredients
- 500g rabbit heads
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 tablespoons Sichuan peppercorns, toasted and ground
- 2 tablespoons chili flakes
- 1 teaspoon salt
- 2 tablespoons Chinese black vinegar
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 2 green onions, chopped
- 1 piece of ginger, sliced
- 1 star anise
Directions

Heat vegetable oil in a wok or large pan.

Stir-fry garlic, ginger, Sichuan peppercorns, and chili flakes until fragrant.

Add rabbit heads and stir-fry for a few minutes until they turn golden brown.

Add Chinese black vinegar, soy sauce, sugar, and star anise.

Continue cooking until the rabbit heads are fully cooked and coated in the sauce.

Garnish with chopped green onions and ginger slices.
